Sauvignon Blanc has always been destined to be exotic. Finally, it is showing. Delicate and mineral. Expect an (extremely well-measured) guava, shyly hiding behind a wall of lemon zest, star fruit, fennel and white flowers. In fact, everything in this wine is extremely well-measured. It actually does look a bit like a Sauvignon Blanc, for a change - but in a very subtle way. A textural, saline, character-driven wine.
Sauvignon Blanc from Forreston, Adelaide Hills, fermented in spotless steel tanks and aged in very old french barrels sur lie for 9 months, then gravity-bottled and left for another few months to settle.
